Palestine’s national dish is musakhan, which is roast chicken baked with onions, sumac, allspice, saffron and fried pine nuts. Also called muhammar, the dish is popular throughout the Levant. Musakhan is often paired with taboon bread, a baked flatbread. Several of the ingredients used in the dish, such as olive oil, sumac and pine nuts, are common elements of Palestinian cuisine. In 2010, forty cooks in Ramallah prepared a serving of musakhan that was 4 meters in diameter and was entered into the Guinness Book of World Records.
